Texas Caviar Dip

Have you made black-eyed peas today?  It’s a Southern Tradition to eat black-eyed peas on New Years Day – they’re thought to bring Prosperity for the coming year!  My friend Bill’s recipe for Texas Caviar Dip is DELICIOUS and ADDICTING! It’s sure to become one of your favorites any time of the year!

Texas Caviar Dip

Ingredients

2 15oz cans black-eyed peas (drained and rinsed)

1 15 oz can petite diced tomatoes (drained)

2 jalapeño peppers (finely chopped)

1 small onion (chopped)

1 bell pepper (chopped)

1/4 cup cilantro (finely chopped)

6 tablespoons red wine vinegar

6 tablespoons olive oil

1/2 tsp salt

1/2 tsp ground black pepper

1/2 tsp garlic powder

1 tsp dried oregano

1 1/2 tsp ground cumin

Combine all of the above ingredients in a large bowl, cover & refrigerate.  The longer it chills, the better it gets!

Serve with your favorite Tortilla Chips & Enjoy!
